Which would suit your kitchen?
Start with a filled pouch
Anova lists a 12-by-8.6-by-3-inch chamber. Avid Armor documents a different cavity and up to 11-by-10-inch pouches. Measure your food, bag and sealing margin. A broad seal bar is not enough evidence that an awkward or tall portion will fit.
Decide whether the extra modes matter
Anova’s additional chamber modes may interest cooks who want infusion or compression as well as sealing. The USV20’s timing controls are worth comparing for repeat prep. If your main task is simply packing freezer portions, choose around fit and operation before giving extra modes much weight.
Include the space above the machine
The USV20 needs about 17 inches with its lid open. Check Anova’s current opening and access requirements too. For either, a usable counter position lets you load, straighten pouches and clean spills without moving other equipment. Vacuum packaging does not replace normal food-safety storage.
